  1. For Beef broth :
  2. 250 gm beef
  3. 3 glass water
  4. 1 tbsp ground garam masala mix
  5. 1/2 onion peeled
  6. 3-4 garlic cloves

  8. 1/2 tsp salt
  9. 1 tsp crushed coriander
  10. For Pulao :
  11. 1 medium onion sliced
  12. 1/4 cup oil
  13. 1 tbsp ground garam masala
  14. 1 tsp crushed coriander
  15. 1 tsp cumin
  16. 1/2 tsp ginger garlic paste
  17. 1 1/2 tsp biryani masala
  18. to taste Salt
  19. 1 1/4 glass rice (soaked for 1/2 hour)
  20. 1 3/4 glass Beef stock (or as per your rice)
  21. 1/2 carrot julienne cut
  22. For raita:
  23. 1/2 cup yogurt
  24. 1/2 onion shredded
  25. 1/2 cucumber peeled and shredded
  26. 1/2 carrot peeled and shredded
  27. to taste Salt and black pepper
  28. 2 pinch crushed coriander
  29. 2 pinch fresh coriander chopped
  30. For topping of pulao :
  31. 2 tbsp Sauté raisins (fry in 2 tbsp oil)
  32. 2 tbsp carrots julienne cut
  33. 2 tbsp fried onion

Instructions to make to make Kabuli Pulao

  1. In a pressure cooker add all the ingredients for stock and pressure cook till tender.
  2. Meanwhile in a big pot add oil and onion and fry till onion is golden brown. Then add the carrots.
  3. Now add the ginger garlic paste and all the spices. Mix.
  4. Now add the beef and mix. Then add the beef stock as required according to your rice.
  5. Then add the soaked rice.
  6. Cook on medium high flame till water comes to the level of rice. Cover and cook on lowest flame for 7-8 minutes.
  7. Meanwhile in a small bowl add yogurt and other ingredients and mix well.
  8. Dish out the Pulao and top with fried raisins, onion and carrots.
  9. Serve with raita and fries.
