- For Beef broth :
- 250 gm beef
- 3 glass water
- 1 tbsp ground garam masala mix
- 1/2 onion peeled
- 3-4 garlic cloves
- 1 inch ginger
- 1/2 tsp salt
- 1 tsp crushed coriander
- For Pulao :
- 1 medium onion sliced
- 1/4 cup oil
- 1 tbsp ground garam masala
- 1 tsp crushed coriander
- 1 tsp cumin
- 1/2 tsp ginger garlic paste
- 1 1/2 tsp biryani masala
- to taste Salt
- 1 1/4 glass rice (soaked for 1/2 hour)
- 1 3/4 glass Beef stock (or as per your rice)
- 1/2 carrot julienne cut
- For raita:
- 1/2 cup yogurt
- 1/2 onion shredded
- 1/2 cucumber peeled and shredded
- 1/2 carrot peeled and shredded
- to taste Salt and black pepper
- 2 pinch crushed coriander
- 2 pinch fresh coriander chopped
- For topping of pulao :
- 2 tbsp Sauté raisins (fry in 2 tbsp oil)
- 2 tbsp carrots julienne cut
- 2 tbsp fried onion
Instructions to make to make Kabuli Pulao
- In a pressure cooker add all the ingredients for stock and pressure cook till tender.
- Meanwhile in a big pot add oil and onion and fry till onion is golden brown. Then add the carrots.
- Now add the ginger garlic paste and all the spices. Mix.
- Now add the beef and mix. Then add the beef stock as required according to your rice.
- Then add the soaked rice.
- Cook on medium high flame till water comes to the level of rice. Cover and cook on lowest flame for 7-8 minutes.
- Meanwhile in a small bowl add yogurt and other ingredients and mix well.
- Dish out the Pulao and top with fried raisins, onion and carrots.
- Serve with raita and fries.
