  16. 1/2 tbsp Ginger Garlic Paste
  17. 4 medium sized Tomatoes pureed
  18. As Per Taste Salt
  19. 1/2 tbsp Dhania Jeera Powder
  20. 1/2 tbsp Red Chilli Powder
  21. 1 inch Ginger Julienne
  22. As Per Required Water
  23. 1/2 tsp Garam Masala
  24. 1 tsp Kasuri Methi
  25. As required Fresh Chopped Green Coriander Leaves as required

  27. 2 cups Maida
  28. 3 tbsp Rava
  29. As per taste Salt
  30. 1 tsp Sugar
  31. 1/2 cup Fresh Curd
  32. 1 tbsp Oil
  33. 1/2 tsp Baking Soda

  1. Chola - Properly wash and soak chana in enough water for 6 to 8 hrs.
  2. Take chana, garlic cloves, cinnamon sticks, black cardamom, green cardamom, cloves, black peppercorns, bay leaf, carrom seeds, tea concoction, and salt in a pressure cooker. Add enough water and pressure cook for 4 whistles.
  3. Heat oil in a pan on medium flame. Add onion paste and cook till it turns golden brown in colour. Add little water if required to avoid burning. Add ginger garlic paste and cook for 1 to 2 mins.
    Add tomato puree, and salt, mix and cook till oil is released, stirring in between.
  4. Add dhania jeera powder, red chili powder, and ginger julienne, mix and cook for 3 to 4 mins. Add pressure-cooked chana along with water and spices. Mix well and add water to adjust the consistency if required and bring it to a boil. Cook for 2 to 3 mins.
  5. Add garam masala, Kasuri methi, and green coriander leaves, mix and cook for 2 to 3 mins. Switch off the flame. Chola is ready to Serve.
  6. Bhature - Mix well maida, rava, salt, sugar, fresh curd, oil, and baking soda in a mixing bowl. Gradually add water and knead soft dough. Grease dough with oil, cover, and keep aside for 1 hr or more.
  7. After an hour or so knead the dough well and divide into equal parts and make smooth balls. Make sure there are no cuts on the balls.
  8. Roll balls in little thick puri in a round or oval shape without dusting flour. Use oil for rolling puri. Deep fry in hot oil till it turns golden brown in colour from both sides. Remove in a paper napkin. Make all bhature's in the same way.
  9. Serve Hot delicious Amritsari Chole with Bhature. Enjoy !!
