  1. For chicken marination
  2. 1 kg chicken (big piece cut and washed)
  3. 2 tbsp Ginger garlic paste
  4. 1 tsp Biryani masala
  5. 1 cup Yogurt
  6. 1 tbsp lemon juice
  7. 1 tsp garam masala
  8. 1/4 tsp nutmeg powder (jayefal powder)
  9. 1/4 tsp mace powder (javitri powder)
  10. 1 tbsp red chilli powder (lal mirch powder)
  11. 1 tsp black peppercorns powder
  12. 5-6 Cashewnuts make paste of kaju and postadana
  13. 2 tsp poppyseeds make paste of kaju and postadana
  14. 1 tbsp Refined oil
  15. to taste Salt
  16. For rice preparation
  17. 1 kg long grain basmati rice ( washed and soak for at least 1/2 an hour
  18. 4-5 Black cardamom
  19. 3-4 cinnamon stick
  20. 2 tbsp Salt
  21. 1 lemon juice
  22. 1 tbsp refined oil
  23. For frying potato
  24. 4-5 big size potato
  25. 2 tbsp refined oil
  26. 1/4 tsp red chilli powder
  27. 1/4 tsp cumin powder
  28. 1/2 tsp ginger garlic paste
  29. 1/4 tsp garam masala powder
  30. to taste Salt
  31. For cooking chicken
  32. as required Need marinated chicken
  33. 1 medium size onion (finely sliced)
  34. 2 tbsp clarified butter (ghee)
  35. For layering of biryani
  36. Handful barista (fried onion)
  37. Handful coriander and mint roughly Chopped
  38. 1/2 tsp Orange food colour mix in warm milk or some thread of saffron in warm milk
  39. 1 lemon juice mix with 2 tsp of sugar

Steps to make to make Chicken Dum Biryani (Kolkata style)

  1. First of all marinate the chicken with all the ingredients above and leave it for at least 1 hour.
  2. Next step we will prepare our rice,always use big pan or degchi so that we can pour good amount of water to boil the rice.
    In a pan take more than 1/2 level of water or 3 litre.
  3. Switch on the gas and put your vessel on gas pour the water and add all the ingredients like Bali elaichi, dalchini,salt,lemon juice and refined oil.
    Bring the water to boil and add soaked basmati rice,Boil the rice on high flame till cooked 80%.
    When cooked 80% strain the rice from water and remove all the whole garam masala from the rice.Now rice is ready keep it aside.
  4. Next we will prepare potato,yes I love potato in biryani if you also love can also add it,it’s totally optional but believe me it enhances the flavour of biryani.
  5. In a pan we will add oil and heating then add potato and all the spices above from ingredients with salt and shallow fry on low flame Sontag our potato get tender. First 2-4min can cover the lid of pan and then remove coverband fry till the potato get tender and coated with nice golden colour.
  6. Now we will cook chicken for biryani,for this in a wok add ghee and add on sliced onion cook it till light golden brown then add marinated chicken to onion mix well and cook till tender and nicely coated with the masalas. Our chicken is ready for laying of biryani.
  7. Finally we have everything ready to put biryani on dum.for this in a big pot add half of the cooked chicken,and then add half of the cooked potato layer it with half cooked rice then sprinkle some biryani masala,some garam masala,chopped coriander and mint leaves,colour milk,and lemon mix.
    Repeat it again all the process of layering.seal cover it with kneaded wheat flour,put back on mid high flame for 5 minutes and the on low flame for about 15 minutes.
  8. After so many steps but interesting we are ready to enjoy our lip- smacking,aromatic biryani.
    Serve it with raita and salad of your choice, enjoy it fullest.
