  2. 2 inch ginger
  3. 10 garlic cloves
  4. 1 1/2 tbsp fennel seeds
  5. 2 tbsp coriander seeds

  9. 2 inch cinnamon
  10. 3 bay leaves

  12. 1 kg mutton chops

  15. 2 glass basmati rice
  16. 1 1/2 cup maida

  18. 1 tsp sugar
  19. 1 tsp yeast
  20. 1/2 tsp mixed herbs
  21. 1 tbsp olive oil
  22. Water for kneading
  23. 1 potato
  24. 1 tsp maida
  25. 1 tsp cornflour
  26. 1/2 tsp chilli flakes
  27. 1/2 tsp mix herbs
  28. Pinch turmeric
  29. To taste salt
  30. 1/2 tsp oil
  31. 1/2 carrot
  32. 1 small tomato
  33. 1/2 capsicum
  34. 1/2 cup boiled chickpeas
  35. 3 boiled eggs
  36. 1 green chilli
  37. 2 tbsp oil
  38. 2 green cardamom
  39. 1 cinnamon
  40. 1 star anise
  41. 1 mace
  42. 5 cloves
  43. 1 tsp black pepper
  44. 1 onion
  45. 1 tbsp ginger garlic paste
  46. 1 tsp ghee
  47. 2 glass stock+2 glass water
  48. To taste salt
  49. 1 tsp vinegar
  50. 1/2 tsp rose water
  51. 1 green chilli
  52. 1 tbsp oil
  53. 1 onion
  54. 1 tbsp ginger garlic paste
  55. 2 tbsp tomato paste
  56. 1 tbsp garam masala
  57. 1 tbsp meat masala
  58. 2 tbsp curd
  59. Some fried onions
  60. 1 tbsp chopped coriander leaves

  64. as required Some chilli flakes

  66. 1 egg+
  67. 1 tsp butter
  68. as required Some black+white sesame seeds

Instructions to make to make Turkish Mutton Ouzi Rice(chops)

  1. Add starting 14 ingredients to the pressure cooker (till water) and let the mutton dip in water.
  2. Add salt to taste and cook till 3 whistles or till done. Soak 2 glass of rice for about 45 mins to 1 hour.
  3. Take 1 1/2 cup maida, salt to taste, sugar, yeast, herbs, oil mix everything well and then add water and knead.(this dough is for covering top) add oil and cover and keep till doubles.
  4. Take a potato wash thoroughly and scrub the skin and cut into 8 pieces add salt and water and boil for 2 mins. No need to cook just boil for 2 mins.
  5. Strain and in a plate take maida, cornflour,chilli flakes,herbs,turmeric and salt and mix well. Coat the potato with little oil and coat the powder masala to it.
  6. Mix well and then keep in freezer for half an hour and then deep fry till golden and crisp.
  7. Now the mutton is done. Separate the chops from the stock and keep aside. Strain the stock and save it.(in this we are going to cook the rice.)
  8. Take a pot add oil and then chopped onion and then ginger garlic paste. Saute well. Add ghee and add strained rice and coat well. Add 2 glass of stock and 2 glass water.(double amount of rice). Dear stock is saved for making soup. When the water boils adjust salt, add vinegar, rose water and green chilli and cook on sim till done.
  9. Cut carrot into juliennes, tomato, capsicum, chickpeas, eggs, chillies. Fry carrots and add to the rice and chopped coriander and mix well.(keep some carrots for garnishing). Dish out the rice to a baking plate.
  10. For the mutton chops masala, add oil to a pot and then add onions, ginger garlic paste saute and add the tomato paste.
  11. Add garam masala, meat masala and curd and saute well.
  12. Cook till oils comes out and add the chops and coat well in masala.
  13. Assemble the chops on rice, the toppings,eggs,chickpeas,tomato,capsicum,nuts, fried onions, coriander,chilli flakes,raisins.
  14. Now the dough has doubled. Knead it and roll it little bigger than the diameter of the plate.
  15. Place a rolling pin in between and fold one side on to the rolling pin and carefully lift the rolled dough and place on the plate.
  16. Wet hands and seal the sides to the plate. Brush egg+butter mix and sprinkle sesames seeds.
  17. Bake in preheated oven for 20-25 mins and when the top is brown take it out and brush with some butter. Serve as it is on to the dining table and in front of your guest cut the side and open.
