In this menu from top anticlockwise salt,salad, yoghurt and split chickpeas lentil chutney,fried papad, katachi aamti(spicy gravy), kadhi(spicy yoghurt and gram flour Soup), dal palak curry (spinach lentil gravy), plain yoghurt, plain chapati, sweet puranpoli,plain steam white rice and plain yellow dal(lentils), mung sprouts Fritters (vada)and next to rice,dill leaves gram flour Fritters (pakoda)
Ingredients and spices that need to be Get to make Maharashtratrian Puranpoli Thali:
- 1/2 tsp salt
- Salad- 1 piece of lemon, tomato and cucumber slices
- 1 tsp mokali dal chutney
- 1 tsp chana dal(split chickpea lentils) and yoghurt chutney
- 1 fried papad
- For Katachi Aamti(spicy gravy)-
- Oil as required
- 1/4 cup dry coconut
- 1 onion
- 1 tsp ginger garlic paste
- 1 tbsp goda masala powder (readymade)
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- As needed water to adjust the consistency of gravy
- For kadhi-
- 1 cup Sour yoghurt
- 1 tbsp gram flour
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/4 cup curry leaves
- 1 tbsp chopped coriander leaves
- 1/2 tsp garlic paste
- 1 cup dal palak curry
- 1 cup plain yoghurt
- 1 plain chapati
- 1 puranpoli
- 1 cup white steam rice
- 1/4 cup cooked yellow split pigeon peas
- 5-6 mung sprout Fritters
- 4-5 dill leaves Fritters
Instructions to make to make Maharashtratrian Puranpoli Thali
- For katachi aamti-
- Roast dry coconut slices and onion slices by adding oil till golden brown
- Grind and make fine paste
- Now heat oil in a pan
- Add ginger garlic paste,then add ready coconut onion paste
- Saute for 1min
- Now add salt, turmeric powder, red chilli powder and goda masala(garam masala powder)
- Saute for 1min
- Add water and boil for 3-4 min
- Sprinkle chopped coriander leaves
- Katachi aamti(or sar or spicy gravy) is ready
- For kadhi-
- Take a blender jar
- Add garlic, green chillies, curry leaves and chopped coriander leaves
- Grind coarsely
- In the same pot
- Add yoghurt (curd) and gram flour,salt and turmeric powder
- Blend well till smooth paste
- Now heat oil in a kadhai or pan
- Add mustard seeds and cumin
- Once it crackles,add curry leaves and dried red chilli, Asafoetida
- Add ready yoghurt paste, also add 1 glass of water
- It should be of soup consistency
- Add 1/2 tsp sugar
- Again boil for 3-4 min
- Now turn off the flame
- Sprinkle chopped coriander leaves
- Kadhi is ready to serve
